I must be having a small obsession with space since we saw Interstellar this past weekend! Review: the movie was pretty fascinating. It made it  apparent that my brain will never be able to comprehend the idea behind time/space travel. Never. Wormholes?! It boggles my mind.

Pinteresting: Whole-Wheat Zucchini Bread

So after I made the Traditional Hummus, I decided to make the Whole-Wheat Zucchini Muffins! Again, the recipe came from 100 Days of Real Food.

I love zucchini bread (and banana and pumpkin and…I just love bread. All bread). I always have a very hard time when it comes to self control and portion size. So I figured this recipe would be great because 1. I could make it in a muffin tin so I have just the right amount and 2. It’s a healthier version of my usual recipe. That said, I didn’t’ stick to this recipe 100% and I sort of messed it up a bit! I had coconut oil but it was unrefined and I wasn’t sure how the coconut taste would affect the recipe, so I went with regular ol’ vegetable oil. I had honey, but was a little shy of the 1/2 cup needed ( I should really learn to check my ingredients before I start baking). I had plenty of cinnamon but read the recipe wrong and only added 1 teaspoon of it instead of 1 tablespoon ( I should really learn to carefully read the directions/amounts). The batter was very, very thick but I read comments from others that said theirs turned out the same.

The first batch turned out well, despite the shortness of sweetness in honey and cinnamon. Not surprisingly, the second batch turned out much better ( I added more cinnamon to the batter). The texture is definitely different, I’m assuming because the batter was so thick, but didn’t affect the taste.

All in all, they are quite yummy! No, they don’t taste quite as good as the white wheat-lots- o’ sugar ones. But they’re good and better for me! I froze half the batch although next time I will freeze more than that since (as good as they were) I don’t like eating the same thing for breakfast every day and I have a lot that will go to waste.

They didn’t look a thing like the picture from the recipe! You can really see the zucchini in it…probably because I got lazy and didn’t grate it as finely as normal. Looks aside, I would make this one again!

Pinteresting: Traditional Hummus

Today was busy, but productive! I had much more free time on my hands than usual so I decided to make the most of it! My day began with brunch with my mom. Afterwards, I made my weekly (hahaha who am I kidding?) trip to the grocery store. I stocked up on lots of good things and decided to finally try a few recipes from my Pinterest page!

The first recipe was for Traditional Hummus and I used the recipe from 100 Days of Real Food. It turned out better than I expected, given how much I love my store-bought kind. I definitely suggest using the tahini it recommends for the recipe. (Side note: I did not find it near the peanut butter in the grocery store as the site suggested. Instead, it was in the International Aisle). I also made a few tweaks to the recipe; I added probably three times more water  than called for because I like my hummus creamier and I added both ground red pepper and crushed red pepper flakes because I like mine spicy! One batch filled a standard size mason jar. I am bringing some to share at work tomorrow! It was super easy and a recipe I will make it again.

I’m loving my new fruit infusion pitcher and Citruszinger bottle from Crate and Barrel! I am on a mission to cut soda out of my diet and plain water is just so blah for me. This is a start!

And just for fun, I am loving this Marcel the Shell with Shoes On video. I saw it for the first time today before seeing a movie at the theatre. I. could. not. stop. laughing. It’s complete ridiculousness and utter cuteness!

Stolen Dance

I don’t often listen to the radio, but when I do I listen to The Project. That’s what I was listening to as I drove around yesterday when I heard the song Stolen Dance by Milky Chance. I immediately loved the song and the lead singer’s voice. Today, as much as it pains me to admit this, I was watching MTV’s Catfish and heard a song on an episode that I really liked. Turns out, it was another song of theirs. Guess I’m really digging their music, huh?
